Steps 1-3: Mash the head of garlic under a kitchen towel to break up the cloves.
Steps 4-5: Mash each clove under large metal knife (not my Ming Tsai series ceramic knife!) You may also use a small sauté pan to smash the garlic on the cutting board while pressing firmly down.
Step 6: This will make the skin come loose around the clove. Now you can easily remove the skin.
Step 7-8: Cut the clove from left to right and then from top to bottom.
